Turn on the Oven (Tuesday?) – Yellow Thai Curry

Once again, it’s not Tuesday, and I did not turn on the oven. Still, I did turn on the range and made the kids a hot healthy meal, so I’m calling Turn on the Oven Tuesday a success.

This week we made Yellow Thai curry. It might have been the easiest meal yet. To make it, we just threw every vegetable we had into the frying pan with some store bought sauce.

So they had more time to soften, we first threw in the potatoes and carrots with a little Nutiva Organic Extra Virgin Coconut Oil.

Next we threw in yellow pepper, green pepper, onion and cashews. We then added a bottle of Yellow Thai Curry sauce. We filled it back up with soy milk and added that as well. (Coconut milk would have been good too.)


While the veggies softened, we added an apple, a little seasoned salt and some sea salt. When the veggies were tender, we had dinner done.  It only took about 15 minutes.

We served with rice… but were wishing we made the cauliflower rice. Good thing there’s a chance to try again… every night of the week. 🙂
